Pancake Day is on its way! On Tuesday 17th February pancake lovers everywhere will be stuffing their little gobs full of sweet and savoury crepes, galettes and American style pancakes in a desperate attempt to clear their houses of all treats before lent. Hurrah!
We’re not sure we believe in the neglect of treats during this lent time (or any time, in fact), but we do certainly believe in Pancake Day. Here are five of our favourite recipes for this wonderful day of pancake goodness.
The Glutopia One
Perfect Gluten Free Blueberry Pancakes
We shared this recipe a few months ago, and it’s still one of our favourites. This fool-proof recipe makes perfect fluffy pancakes every time. Chuck some blueberries in the batter before frying and add blueberry compote and maple syrup on top.
The Healthy One
Almond Banana Pancakes with Vanilla Yoghurt and Berries
Only fresh fruit, cinnamon and vanilla are used to sweeten these gluten free pancakes by Hemsley & Hemsley. We like the sour flavour of natural yogurt, but add a dash of honey if you like it a little sweeter.
The Classic One
Simple Gluten Free Crepes
Simplicity is key when it comes to pancake day, so let your toppings steal the show with these gluten free beauties, created by BBC Food. You can’t have these without lemon and sugar on top!
The American One
Gluten Free American Style Fluffy Pancakes
There’s something about a fluffy stack of pancakes covered in butter and syrup that makes getting up just a little bit easier, says Minimalist Baker, and we couldn’t agree more! This is a wholesome, homemade everyday pancake mix. Stack ‘em high!
The Wheat Belly One
Wheat Free Pancakes
These pancakes have almost no sugar, so serve with Greek yogurt, fresh fruit, or your favourite maple syrup if you’d like to sweeten them. We love the use of almond flour (almond meal) in pancakes.
